{"id":299,"date":"2010-03-14T06:07:40","date_gmt":"2010-03-14T06:07:40","guid":{"rendered":"http:\/\/www.lynnspin.com\/?p=299"},"modified":"2011-07-26T21:38:40","modified_gmt":"2011-07-26T21:38:40","slug":"delicious-curry","status":"publish","type":"post","link":"https:\/\/www.lynnspin.com\/?p=299","title":{"rendered":"DELICIOUS CURRY!"},"content":{"rendered":"<p style=\"text-align: center;\">Oh sweet yummy curry, GET IN MY BELLY!\u00a0 My sister-in-law found this recipe for Massaman Curry on <a title=\"All Recipes\" href=\"http:\/\/allrecipes.com\/Default.aspx\" target=\"_blank\">AllRecipes .com<\/a> and we all loved it.\u00a0\u00a0 My husband and I make it probably once every other week.\u00a0 It&#8217;s super easy and not a spicy curry at all (I don&#8217;t like spicy food).\u00a0 You will probably need to go to an Asian market for a few of the ingredients (if you live in San Diego I can tell you where a good one is).\u00a0 We add two chopped carrots to the curry and when it&#8217;s done we put it over brown or white rice.\u00a0 Usually we have enough left over for lunch the next day.\u00a0\u00a0<strong> <\/strong><\/p>\n<p style=\"text-align: center;\"><strong>Here it is!<\/strong><\/p>\n<p style=\"text-align: center;\"><strong><a rel=\"attachment wp-att-302\" href=\"https:\/\/www.lynnspin.com\/?attachment_id=302\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-302\" title=\"curry\" src=\"https:\/\/www.lynnspin.com\/wp-content\/uploads\/2010\/03\/curry.jpg\" alt=\"\" width=\"587\" height=\"400\" srcset=\"https:\/\/www.lynnspin.com\/wp-content\/uploads\/2010\/03\/curry.jpg 587w, https:\/\/www.lynnspin.com\/wp-content\/uploads\/2010\/03\/curry-500x340.jpg 500w\" sizes=\"auto, (max-width: 587px) 100vw, 587px\" \/><\/a><br \/>\n<\/strong><\/p>\n<p style=\"text-align: center;\">\n<p style=\"text-align: center;\">\n<div>\n<h3>Ingredients<\/h3>\n<ul>\n<li> 2 tablespoons vegetable oil<\/li>\n<li> 3 tablespoons curry paste<\/li>\n<li> 1 (3\/4 inch thick) slice ginger, minced<\/li>\n<li> 1 1\/4 pounds skinless, boneless chicken breast meat &#8211; cubed<\/li>\n<li> 3 tablespoons brown sugar<\/li>\n<li> 3 tablespoons fish sauce<\/li>\n<li> 3 tablespoons tamarind paste<\/li>\n<li> 1\/3 cup peanut butter<\/li>\n<li> 3 cups peeled, cubed potatoes<\/li>\n<li> 1 (13.5 ounce) can coconut milk<\/li>\n<li> 3 tablespoons fresh lime juice<\/li>\n<\/ul>\n<\/div>\n<div style=\"text-align: center;\">\n<h3 style=\"text-align: left;\">Directions<\/h3>\n<ol style=\"text-align: left;\">\n<li> Heat vegetable oil in a large saucepan over medium heat. Stir in curry paste and minced ginger; cook and stir for 2 minutes. Stir in the cubed chicken, and cook until the pieces turn white on the outside, about 3 minutes.<\/li>\n<li style=\"text-align: left;\"> Stir in brown sugar, fish sauce, tamarind paste, peanut butter, potatoes, and coconut milk. Bring to a boil, then reduce heat to medium-low, cover, and simmer until the potatoes are tender and the chicken pieces are no longer pink in the center, about 20 minutes.
